Reflux Friendly Shrimp Fried Rice

For all our Chinese food lovers, here is a fried rice recipe I eat almost every day.

Bragg’s Liquid Aminos (shop link here) will be our substitute for soy sauce. While it is still soy-based, it is unfermented and does not contain thickeners or additives– both sources of increased stomach acidity. Because the thickeners have been removed, Bragg’s is quite concentrated, so you will need much less than a traditional soy sauce. Fried broccoli has the advantage of not adding water, and its caramelization imparts a light sweetness.

Don’t be shy with the olive oil here. Because the low acid diet cuts out most sources of fat, this will be one of your main sources of healthy fats, which are necessary for the absorption of nutrients and the integrity of nerve fibers, and help to keep you full during the prescribed 4 hour wait between dinner and bedtime.   1. Set cooktop to just under medium heat, and add enough olive oil to medium pan to fit each piece of broccoli. For reference, as many people’s stoves are different, I use the same temperature here that I use to fry eggs.
  2. Test the heat by adding one broccoli floret. If the olive oil begins to bubble, the heat is adequate. Add all florets. Stand by and wait until you see the visible edges of the broccoli brown, then flip. Each side should be golden brown, or charred if desired. Remove from pan to bowl.
  3. The meat should be squeezed dry with a paper towel to prevent popping and spitting. For shrimp ONLY, add to pan and squeeze on a few drops of Bragg’s per piece. As we are only reheating, each side should be cooked for just under a minute. Remove from pan to bowl.
  4. If the olive oil has been soaked up by now, add a little more, enough to coat the rice. Add brown rice to pan. Lightly drizzle Bragg’s Liquid Aminos in a line across the rice. Fold it in, coating the rice thoroughly with oil and Bragg’s. Now is the time to taste a spoonful of rice. If you did not use enough Bragg’s for your liking, add a few drops at a time until satisfied. Too much can be diluted with olive oil or more rice.
  5. If you are using Imitation Crab, add now and toss to heat and coat. It is vital to add it after the rice is coated, as imitation crab acts like a sponge.
  6. Toss until heated through. Remove rice from pan to bowl. Spooning the hot rice over the broccoli and shrimp will effectively restore any heat lost.
  7. Enjoy!
